Steve's Szechwan Sausage Wraps
This make a nice appetizer or
light main course. Adapted from a recipe from McCormick Spice Company.
Serves 4 (2 each)
I N G R E D I E N T S
1 pound pork sausage
2 cloves garlic, minced
1 tablespoon black bean hot sauce
1 teaspoons chili pepper flakes
1 can (8 ounces) sliced water chestnuts, drained and chopped
1 cup shredded carrots
1/2 cup sliced green onions
1/2 cup chopped peanuts
3 tablespoons light soy sauce
1 head Bibb or iceberg lettuce, leaves separated, rinsed and drained

S T R U C T I O N S
1. In large skillet, cook sausage until well browned, stirring to break meat into small
pieces. Drain off the accumulated fat.
2. Add the black bean hot sauce, water
chestnuts, carrots, green onions, peanuts and soy sauce. Cook and stir 2 to 3 minutes or
until heated through.
3. To eat, spoon about 1/2 cup sausage
mixture into center of each lettuce leaf, fold up and tuck in the edges (like a fajita).
