Chocolate Mousse Pie with Chocolate Crumb Crust

Chocolate Mousse Pie on Plate

C R U S T  I N G R E D I E N T S
25 chocolate wafers (Nabisco brand)
6 tablespoons unsalted butter or margarine

P  I E   I N G R E D I E N T S

1(16-ounce) package Azumaya Silken Tofu (drained)
12 ounces good quality semi-sweet or bittersweet chocolate cut into small pieces
2 to 4 tablespoons sifted powdered sugar if desired
2 teaspoons pure vanilla extract

1 Whipped cream or non-dairy whipped topping Chocolate shavings or curls

I N S T R U C T I O N S
Crust
Put chocolate wafers in a food processor and blend until fine.
Melt butter.
Mix butter and crumbs in a small bowl.
Press mixture into bottom and sides of a 9" x !/2" tart pan with a removable bottom.
Chill for 30 minutes

Pie
Microwave chocolate in microwavable bowl on MEDIUM-HIGH (50%) for 1 to 3 minutes, stirring occasionally until melted and smooth.

Puree tofu in food processor; add melted chocolate and powdered sugar; process until completely blended, scraping sides down. Add vanilla; blend well.

Turn mixture into crust.

Chill 1 hour or until set. Garnish with whipped cream and shavings. Let stand at room temperature for 15 minutes, uncovered, before serving (to enhance the flavor).

A traditional chocolate mousse is made with eggs, butter, sugar and chocolate. In order to compare the two products equally we are only comparing the "filling" of the Mousse Pie with the standard Mousse. 

Standard Mousse Notes
A standard chocolate mousse requires cooking the egg yolks and chocolate mixture, then beating the egg whites separately and folding them into the cooled mixture.  This version requires a minimum of 3 hours to chill. All in all, considerably more effort than this quick tofu method.

Substitutions
Crust -
You may substitute a 9" purchased chocolate cookie crust. We prefer to make our own fresh crust given the preparation time is minimal and the crust looks and tastes better.

Vegan or Lower Fat Option
Use vegan chocolate cookies and margarine for crust. Omit whipping cream.

Mousse Parfait (Lower Fat Option)
Omit crust and spoon the mousse into parfait glasses, custard cups, or pots de creme cups.

Review
We have to admit, this pie is very good. One taster had no idea it was tofu until we told him.  Tofu is wonderful when it comes to absorbing flavors and the bittersweet chocolate was a perfect combination.
The texture was smooth and creamy.  This is a great way to add some soy to your diet.

Another plus is that the pie is very easy and fast to make.  The crust is easy too and only needs to chill for 30 minutes.  The pie filling starts to firm up as soon as you stop blending it.

We gave this recipe a 5 (top) rating. It tasted very good and it was fast and easy to make.  And it's even more beneficial if you need or want to cut back on saturated fat, cholesterol, sodium and sugars.

*Note: If you eat the pie and the crust you will only be cutting back some cholesterol. However, if you look at the full nutrient chart you will see that eating the Mousse Pie with crust is very close to the same values as a serving of standard Mousse only.

Glossary
Tofu - Tofu is soybean curd. It has a naturally bland flavor but has the ability to easily take on the flavor of other ingredients cooked with the tofu.  Read more about the health benefits of Soy.

Vegan - Pronounced (VEH-guhn). A vegan is a vegetarian that does not eat any foods from animal sources including no meats, fish,   butter, cheese, eggs or milk products.
