Cajun Wrap
This simple recipe makes a nice quick lunch or dinner meal.  Very easy to make and requires a minimum number of ingredients.

Cajun Chicken & Pepper Wrap

I N G R E D I E N T S
1 boneless, skinless chicken breast, cut into bite size pieces
1/4 cup chopped yellow or red bell pepper, chopped coarse
2 medium whole scallions (green onion), chopped, including tops (keep the greens separate from the white portion)
2 teaspoons Tony Chachere's extra spicy seasoning
3 teaspoons olive oil
1/4 cup shredded sharp or extra sharp cheddar cheese
1 or 2 flour tortillas

I N S T R U C T I O N S
Heat the olive oil in a medium sauté pan over medium high heat.  Add the chicken and sprinkle with Tony's seasoning.  Stir fry for about 2 minutes, add the "white" portion of the chopped green onion, continue to stir until the chicken is almost cooked through.  Add the yellow bell pepper and cook another 2 minutes.  Cut a piece of chicken to make sure it is fully cooked.   Once the chicken is cooked, add the onion greens stir for about 1 min, remove from the cook top.  Place mixture on one or two heated flour tortillas.  Top with shredded cheese and wrap.

Tips and Substitutions
Serve with a small green salad to round out the meal.

No Tony's?
What, your pantry is not stocked with an ample supply of Tony's seasonings?  If not, try making a mixture of salt, cayenne pepper, and a bit of chili powder.  Substitute this mixture for Tony's.  It's not the same but it will still be tasty.

Presentation
Wraps are frequently served cut in half, on the diagonal.

What's a Wrap?
In most cases this is just a variation on a burrito.  The term wrap simply means a mixture rolled up and encased in some form of wrapper.  In this case the wrapper is a tortilla.  It may well be a lettuce leaf or pastry dough.

How to Wrap a Wrap
Fold in sides of tortilla over the filling; fold up bottom and continue to roll up, enclosing the filling.
