Quick Pork Fajitas
A quick pork version of an otherwise well known
skirt steak dish. The name "fajitas" refers to
the type of meat used in the traditional version. Recipe by

N G R E D I E N T S
1 pork tenderloin, about a pound, thinly sliced*
3 tablespoons fajita seasoning
1/2 onion, sliced
1/2 green bell pepper, sliced
4-6 flour tortillas, warmed
I N S T R U C T I O N S
In shallow bowl, toss pork pieces with fajita
seasoning. In large non-stick skillet over medium-high heat, stir-fry pork
pieces with onion and green pepper until vegetables are just tender. Wrap
portions in flour tortillas with salsa.
*Placing pork tenderloin in freezer for about 20 minutes makes slicing
easier.
Serving Suggestions
Put out on the table with a variety of condiments like sour cream, different
salsas and guacamole and let the family create their fajitas to their own
tastes.
