Quick Pork Fajitas
A quick pork version of an otherwise well known skirt steak dish.  The name "fajitas" refers to the type of meat used in the traditional version.  Recipe by The Other White Meat a division of the National Pork Board. Visit their web site for hundreds of simple to make pork recipes.

I N G R E D I E N T S

1 pork tenderloin, about a pound, thinly sliced*
3 tablespoons fajita seasoning
1/2 onion, sliced
1/2 green bell pepper, sliced
4-6 flour tortillas, warmed


I N S T R U C T I O N S
In shallow bowl, toss pork pieces with fajita seasoning. In large non-stick skillet over medium-high heat, stir-fry pork pieces with onion and green pepper until vegetables are just tender. Wrap portions in flour tortillas with salsa.

*Placing pork tenderloin in freezer for about 20 minutes makes slicing easier.

Serving Suggestions
Put out on the table with a variety of condiments like sour cream, different salsas and guacamole and let the family create their fajitas to their own tastes.
