Ancho Chile
The ancho is a dried poblano chili.  Grown in the Mexico City region of Mexico, and in California. Heat rating is 3 - 5.

Mulato Chili
Aslo, a type of dried poblano.  Mulato chilies are grown in central Mexico.   Heat rating is 2 -4.




Pasilla Chili
The pasilla is also known as the chili negro.  It is a dried "chilaca" chili.  It is grown in central Mexico and has a heat rating of 3 - 5.
