Key Lime Sauce
This simple sauce can be used to dress up a simple key lime pie or drizzle over bread pudding.

I N G R E D I E N T S
1 tablespoon cornstarch
1/2 cup plus 1 tablespoon granulated sugar
1/2 cup Key lime juice
1/4 cup, plus 3 tablespoons water

I N S T R U C T I O N S
In a small bowl, dissolve the cornstarch in the 3 tablespoons of water. In a small non-aluminum saucepan stir together the sugar, the lime juice and 1/4 cup of water. Bring to a boil over moderate heat to dissolve the sugar. Stir in the cornstarch mixture and boil, stirring, for about 30 seconds or until the lime sauce thickens.


Savory Key Lime Sauce
Use over pork or a firm white fish. Recipe adapted from La Grillade Restaurant in the Chiang Inn in Chiang Mai, Thailand.

I N G R E D I E N T S
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons chopped onion
2 tablespoons chopped shallot
1/2 cup dry white wine
1 cup chicken stock
1/2 cup beef stock
1 cup whipping cream
2 tablespoons fresh Key Lime juice

I N S T R U C T I O N S
Melt butter in heavy large skillet over medium heat. Add onion and shallot and sauté 3 minutes. Add wine and boil until liquid is reduced by half, stirring occasionally, about 5 minutes. Add both stocks and boil until liquid is reduced to 6 tablespoons, stirring frequently, about 13 minutes. Add whipping cream and boil until sauce is reduced to 1 cup, stirring frequently, about 7 minutes. Mix in fresh lime juice. Season sauce to taste with salt and pepper.

Key Limes

The Key Lime lime (Citrus aurantifolia Swingle), also referred to as a Mexican Lime,  bears a profuse amount of small, thin-skinned, greenish-yellow limes.  This juicy lime is known for it's distinctive aroma high-acid content.  The picture below shows the size and color difference between the more common Persian lime and the Key Lime.
