Ketjap Manis
[KEH-chuhp MAH-nees] An Indonesian sauce similar to a sweet soy sauce flavored with garlic and/or star anise. Kecap manis is sweetened with palm sugar and is used as a condiment.

This recipe is by Heidi Haughy Cusik as it appeared in the The San Francisco Chronicle, 7/1/92.
 

I N G R E D I E N T S
3/4 cup sugar
1 cup soy sauce or Tamari
2 tablespoon water
1 tablespoon sliced lemon grass
1 clove garlic, minced
1 star anise


I N S T R U C T I O N S

Caramelize 3/4 cup sugar in a heavy pot.

Gradually stir in the rest of the ingredients.  Bring to a boil, lower heat and simmer for 10 minutes.

Cool and strain through cheesecloth.

Makes about 1 1/4 cups. Stores indefinitely in the refrigerator.
