Timson is a washed rind cheese made from the unpasteurized cow's milk. Aged 5-6 months, Timson has a rich woodsy, almost smoky flavor. The texture is smooth and buttery, and is extra creamy near the edges. The exterior is orangish-yellow, the interior light yellow.
Timson was produced by the Vermont Shepherd Cheese company but the product is no longer made as of 2004.
