Testun Occelli al Barolo is an Italian cheese made from a combination of goat's and sheep's milk. The cheese is coated with "grape must" which is a byproduct of the Barolo wine making process. The interior of the cheese is straw-yellow with a slightly crumbly consistency. This special cheese is aged for at least five months then refined for two additional months in the Langa vineyards where it is coated with the pressed grapes.
As the story goes this cheese was created by accident when the cheese was hidden in a wine barrel but then forgotten. When the cheese was discovered again it had gained a "wine" flavor and the rest of course is history (or lore).
Serve this cheese with a dark red wine, Barolo would be excellent but if that's not in the budget serve a good Chianti Classico. Add a crusty bread and fresh apple slices.
