Mortadella is a large Italian smoked sausage from Bologna, Italy. The sausage is made with ground beef and pork with added pork fat and seasonings. The traditional sausage is air dried in Italy but must be cooked before it can be exported to the US.
You can use mortadella in sandwiches and appetizers. Try stuffing a thin slice of mortadella with some cheese and fresh herbs, fold and grill. Serve atop grilled slices of crusty bread.
