Gigante Beans are a large, flat, cream colored bean popular in the Mediterranean. The beans are actually 3/4" to 1" long. The beans need to be soaked overnight. To cook, you bring them to a boil for about 3 minutes, turn down the heat, then cook for 60-90 minutes.
Use these beans in a traditional bean casserole or simply boil with onion for a basic side dish.
