Chipotle in adobo chiles (smoked jalapeno chiles) are canned in a red sauce that typically contains tomato puree and a variety of seasonings such as paprika, salt, onions, vinegar, garlic and oregano. Used for making sauces, chipotle mayonaise, rubs as well as other recipes.
The smaller morita chile us used for making the chiles in adobo sauce rather than the large meco chile.
Find chipotles in adobo in some well stocked grocery stores or most Mexican markets. The flavor and quality can really vary. We suggest the La Morena brand.

7-10 medium-sized dried chipotle chiles, stemmed and slit lengthwise
1/3 cup onion, cut into 1/2-inch slices
5 tablespoons cider vinegar
2 cloves garlic, sliced
4 tablespoons ketchup
1/4 teaspoon salt
3 cups water
