Unsalted Butter

Butter which contains no added salt. Because the amount of salt in butter varies from brand to brand and even from batch to batch many cooks prefer to use unsalted butter to provide a more predictable result. Because salt acts as a preservative you may find that the unsalted butter will not last as long as the salted variety.
