Palm Sugar jaggery

Also commonly known as "jaggery" in India. The sugar is dark and unrefined and is made from the sap of palm trees and sometimes from sugar cane. The two most common forms of palm sugar are solid cakes or a soft "honeybutter" texture. The most prefered form is soft and pourable. It is also used in Thai cuisine.
