Caviar
The roe (eggs) of several varieties of fish. Beluga caviar from the beluga sturgeon is considered to be the best are very expensive caviar. The other two main types of caviar (in order of quality and price) are osetra and sevruga. There are two main types of less expensive caviar called lumpfish and whitefish caviar. Purchase inexpensive caviars at specialty grocery stores. Make sure to purchase expensive caviars through reliable gourmet retailers that turn their stock frequently.
