All-purpose flour plain flour
Ground wheat flour with a protein content between 10 - 12 percent. This is the general purpose flour used in most baking and cooking recipes. In the UK it is referred to as "plain flour". Equivalents 1 pound, about 3 1/2 cups 1lb = 4 1/2 cups unsifted 5lbs = 20 cups, sifted Ingredient Substitutions As a thickener, for 1 tablespoon all-purpose flour substitute 1 tablespoon Wondra (instantized flour) OR 1 teaspoon mashed potato flakes. For baking for 1 cup flour substitute 1 cup + 3 tablespoons cake flour OR 1 cup pastry flour (lighter product) |
