Almond oil
Almond oil is extracted from the kernels of dried almonds. France is one of the oldest producers of this nut oil but the U.S. is producing now as well. High quality, less refined almond oils should be used as a "finishing" oil rather than for frying where the subtle flavors may be lost. More refined oils are good for frying as well. It is important to note that almond oil comes in many grades, some of which are not for consumption. Make sure to buy your oil from a reputable grocery or gourmet shop.
