Dad's Broiled Crab Cakes

Makes: 8 crab cakes
I N G R E D I E N T S
2 pounds crab meat
2 eggs
1 teaspoon lemon juice
½ Cup mayonnaise
¼ cup mustard
1 small onion, finely chopped
1 green pepper, finely chopped
1 cup crushed Saltine crackers
1 teaspoon Tabasco sauce
2 teaspoons Worcestershire sauce
1 ½ teaspoons Old Bay seasoning
1 ounce parsley, chopped
Dash of garlic powder

N S T R U C T I O N S
Pick through crab meat
carefully to remove any bits cartridge or shell.
Combine all ingredients in a large bowl, mixing well. Form into crab cakes
about 1/2" thick. Refrigerate at least 30 minutes.
Broil in oven 6 minutes on each side until browned and heated through.
Serve with a red cocktail sauce and/or a flavored tartar sauce.
