Selecting A Tagine
Author Pat Crocker starts us out with an informative description of modern tagines and even includes a side-by-side comparison of some of the most widely available products. The comparison chart includes basic information like whether or not the unit can be used in a microwave, oven, freezer or stovetop as well as some cooking tips specific to each brand. This section is very good if you have not yet purchased your tagine or are in the market for another one.
Overview Of Herbs And Spices And Mediterranean Ingredients
This is one of my favorite parts of the book. Crocker describes the most commonly used herbs and spices and even includes descriptions of medicinal uses. She also discusses many of the ingredients that you'll be using to prepare the various tagine recipes. You can easily find sources for these ingredients in the back of the book.
Recipes
The recipe section of the book is categorized by ingredient such as poultry, lamb, beef, fish and seafood, vegetables, souk food, sides, beverages and sweets. One of the great things about tagine cooking is that recipes typically use a few fresh simple ingredients flavored with an array of exotic spices. Each recipe suggests the proper tagine to use and provides tips on both ingredients and cooking methods to insure your success.
If you are a tagine enthusiastic this book would be a nice add to your recipe arsenal. Paired with a basic tagine the set would be perfect for gift giving to an adventurous cook.
