October 4th is National Taco Day. Celebrate with a couple of fresh, healthy, flavorful taco recipes.
There is a day dedicated to almost every culinary delight you can think of. I'm pleased to announce that October 4th is no exception and in fact represents the day of one of my personal favorite foods - the Taco. If you are mostly acquainted with the "greasy" fast food version then you'll be pleasantly delighted with these healthful alternatives. Our two featured recipes are from Chef Julieta Ballesteros of Los Feliz, a New York, Lower East Side hot spot. Chef Ballesteros is from Monterrey, Mexico and attended the French Culinary Institute in 1998 (see Chef Ballesteros Bio). She's on a mission to show the world that real Mexican cooking is not about greasy-heavy foods.
Try Julieta's Recipes:
- Tacos Vegetarianos - Warmed tortillas are topped with black beans, chipotle potatoes, jicama relish,
fresh corn, cotija cheese, pico de gallo and fresh avocado
- Tacos de Pescado - Sea Bass fillets are oven roasted in adobo powder, placed on warmed tortillas
and topped with guacamole, cucumber pico de gallo, and pickled cabbage.
