Bison, a growing industry.
Apparently there are more bison consumers than there are bison to go around. According to Erin Snelgove, reporter for the Yakima Herald Republic, bison meat has gained in popularity for a variety of reasons including:
Low in fat and cholesterol
Hormone and antibody free
Top sirloin, 3 oz portion is 145 calories/ 5 g fat vs 186 calories/9g of fat for standard beef.
Although bison is grown in every state in the U.S. demand still outstrips supply. Part of the reason for this is because the industry is new and in order to increase herd size in the long run beef producers have to hold back some of the steers from slaughter.
