Cilantro Pesto
A variation on the traditional
Italian pesto that uses cilantro instead of basil. This is a great
accompaniment to fish or vegetable tacos.
I N G R E D I E N T S
1 cup packed coarse chopped cilantro leaves
1/2 cup vegetable oil
2 tablespoons pine nuts, toasted
1 medium garlic clove
1/2 teaspoon kosher salt

S T R U C T I O N S
Combine all the ingredients in a blender or food processor and blend
until smooth. Refrigerate in a tightly sealed container up to 3
days. |
