delicious fresh artichokes in only 13 minutes!
Serves 4
i n g r e d i e n t s
2 -3 medium artichokes, trimmed (see below)
1 cup water
2 tespoons Olive oil
1 bay leaf
1 clove garlic cut in half
1/4 lemon (juiced)
1/2 teaspoon salt (optional)
i n s t r u c t i o n s
Wash and trim the sharp points
off the artichoke, then put two or sometimes three on a rack in a pressure cooker. Add the
water, bay leaf, a couple of squirts (teaspoons) of olive oil, garlic lemon juice and salt
if using. Seal the cooker, let the pressure rise, then lower the light and cook for about
13 minutes. Cool cooker under cold water then serve artichoke with melted butter or
whatever else you choose. We like a homemade vinaigrette.
