Almond Paste
Almond paste looks like a
lump of Play Dough. It is actually a confection made from blanched dried
almonds, sugar, and a liquid such as glycerin or cane syrup.
Almond
paste is similar to marzipan except it is less granular and contains
less sugar. Marzipan is more pliable so it can be used form specialty
shapes.
Use almond paste in in cookies, cakes, candies and pastries.
It is particularly popular in Europe.
Store indefinitely refrigerated. If the paste gets too hard you can heat
it gently to soften it again.

Almond Drop Cookies
Serves: 4 Dozen Small

N G R E D I E N T S
1/2 cup (1 stick) butter,
softened
1/2 cup Love'n Bake™
Almond Paste
1 cup granulated sugar
3 ounces (1 package) cream cheese, softened
1 large egg
1 teaspoon almond extract
2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Optional, Glace cherries, 48 halves or ¼ cup chopped
I N S T R U C T I O N S
Preheat oven to 375° and line cookie
sheets with parchment paper.
Cream together the butter, almond paste, sugar and cream cheese. Add the
egg and almond extract and mix well.
Beat in the flour, baking powder, and salt. This will be a firm
consistency dough. Stir in the chopped cherries, if using.
Drop small equal-sized amounts of dough onto the prepared cookie sheets.
If using, press a cherry half into the top of each cookie. You will have
approximately 48 cookies.
Bake for 10-12 minutes, until a golden brown around the bottom edges.
Cool and store in an airtight container, separating the layers with
waxed paper. Refrigerate if not eaten within 3-4 days.
