2 medium apples, peeled, cored and diced
1/2 medium onion, diced
2 1/2 lbs. carrots, peeled and sliced
2 tbsp. powdered ginger
1 tsp. cinnamon
1 tsp. nutmeg
1/4 lbs. of potato, peeled and diced
1 qt. chicken stock
1/2 C half and half
1/2 C heavy cream
1 tbsp. brown sugar
fresh minced mint for garnish
Combine first 8 ingredients and simmer till tender. Purée in blender until smooth. Add half and half, cream and brown sugar, simmer to incorporate. Thin down with more stock if necessary. Garnish with mint.
