Smoked Turkey Soup

Smoke turkey in a stove top smoker then add meat along with vegetables and broth and simmer to form a tasty soup.

Ingredients

Small whole turkey

Instructions

Smoke turkey for about 45 minutes.
Boil turkey together with a bay leaf, onion, celery, carrots, and peppercorns for 1-1/2 hours. Then take the meat from the bone, strain the broth and add carrots, barley and onion. Cook for 30 minutes until barley is soft.

(Turkey meat - slice off bone, place in blender with 1-1/2 cups of the broth and blend for about 3-4 minutes. Can be added to the soup if so desired).
