2-3 cups watercress leaves
1/2 cup extra virgin olive oil
2 tablespoons macadamia or pine nuts
1-2 cloves garlic
Salt and pepper to taste
1lb spaghetti or pasta of choice
Place the watercress, oil, nuts and garlic in a blender and blend until smooth and bright green. Season to taste with salt and pepper.
Cook pasta according to package directions. Combine pasta and pesto in a large pasta bowl; toss well to coat. Serve immediately.
