Tamarind Syrup

Use syrup over poached fruit

Ingredients

½ tamarind pod, shelled
1 tablespoon superfine sugar
2 teaspoon water
1 lime, juice only
splash of white wine

Instructions

In a small saucepan gently heat the sugar, water, lime juice and wine until the sugar has melted. Add the tamarind and continue to cook until a syrup forms.
