1 pork roast, loin or shoulder (size according to the number of servings you desire)
Fresh herbs, chopped fine. We usually mix, tarragon, thyme, marjoram or oregano.
4 tablespoons finely chopped garlic (more if you like)
1 tablespoon Kosher or grey salt
1/2 to 1 teaspoon freshly ground pepper
1/4 cup olive oil
Remove the roast from the refrigerator about one hour before you are ready to start the roast.
Preheat the oven to 450 degrees
Combine all the ingredients except for the pork in a small bowl and mix well to incorporate. (I like to use my fingers). Spread the mixture over the pork roast then place the roast in a shallow roasting pan on a rack.
Place roast in the oven and turn the heat down to 375degrees and roast until done, about 20 -25 minutes a lb until the internal temperature reaches 160 degrees.
