Tahini

A Middle Eastern sesame paste made from roasted sesame seeds The paste is used for flavoring recipes such as humus or Baba Ganoush.

Ingredients

4 cups sesame seeds
1/4 to 1/2 cup sesame oil

Instructions

Preheat the oven to 350° F.

Spread the sesame seeds on a shallow baking tray and bake, shaking frequently, until fragrant, 8 to 10 minutes. Do not brown. Cool.

Put the sesame seeds in a blender or food processor fitted with the metal blade. Add the sesame oil. Process to a smooth paste, about 5 minutes. Add more oil if necessary, to bring the paste to a thick pouring consistency.

Store: Tahini will keep stored in a tightly covered jar in the refrigerator for several months.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco. They are  advocating that the government take control of the situation because the citizens are unable to do so. The solutions they suggest include doubling the price of sodas via a sugar tax, put age restrictions on purchase of products containing added sugar and legislate which stores are allowed to sell products with added sugar.
