Pozole (Hominy) Casserole

A recipe from Juanita's Foods, manufacturers of Mexican specialty foods. The recipe includes pozole (hominy) cheddar cheese, green chiles and sour cream.

Ingredients

1 medium white onion, chopped
1 garlic clove, minced
1 tablespoons cooking oil
1 cup (8 oz) sour cream
3/4 cup shredded cheddar cheese
1/4 cup milk
1 can (4 oz) chopped green chiles
1/4 teaspoon ground cumin
1 28 oz can Juanita’s Mexican Style Hominy, drained (or use fresh-cooked hominy if you have it)

Instructions

In a small skillet, cook onion and garlic in oil until tender. Remove from heat.

In a bowl, combine onion mixture, sour cream, half of the cheese, milk, chiles and cumin. Add hominy and mix well. Pour into a greased 2 quart baking dish. Bake, uncovered, uncovered at 350 degrees for 30 minutes or until heated through.

Sprinkle remaining cheese and put back in hot oven for 1 – 2 minutes. Remove from oven and serve immediately.
