Vegetarian Tacos

Tacos made with textured soy protein and topped with salsa fresca.

Ingredients

1 cup organic textured soy protein granules
2/3 cup water
2 tbsp. olive oil
1/2 onion, finely chopped
3 garlic cloves, minced
2 tsp. ground cumin
1 tsp. ground coriander
Pinch of crushed red chilies
2 tbsp. soy sauce

Salsa fresca
1 cup tomato chopped
1/4 cup cilantro, chopped
1/2 red onion, chopped
1 tsp. lime or lemon juice
Salt and pepper to taste

Other Optional Toppings
Non-dairy cheddar cheese
Shredded lettuce or cabbage
Sliced avocado
Hot sauce or taco sauce



Instructions

In a saucepan bring the soy protein and water to a boil, turn off flame and cover. In a sauté pan heat olive oil and add onion and garlic and cook until transparent and lightly browned, 3-4 minutes.

Add cumin, coriander and crushed red chilies.

Add soy meat and soy sauce, stir well to combine

Serve a spoonful of the soy meat in some warmed corn tortillas and top with salsa fresca and any/all of the optional toppings.

Salsa Fresca
Combine all ingredients and store in a tightly sealed container, refrigerated until ready to use.
