5- Minute Veggie Tacos

Chef Mad Coyote Joe enjoys these quick tacos during the summer months.  While you can add to them the basics include corn tortillas, avocado slices, tomatoes, onions, cheddar cheese, lettuce and salsa.

Ingredients

corn tortillas
non-stick cooking spray
avocados, slices
tomatoes, chopped
onion, chopped
sliced cheddar cheese
assorted lettuces
salsa
salt to taste 

Instructions

1. Heat up a lightly oiled frying pan.
2. Toss in a few tortillas.
3. Turn the tortillas and place a slice of cheese on each tortilla.
4. As soon as the cheese melts remove to plates.
5. Top with avocado slices, tomato, onion, lettuce and salsa.
6. Salt and eat.^Salt and eat.
7. Also try beans, shrimp or whatever you like

Note From The Chef: During the summer I try to always have a few things on hand. Tomatoes, onions, sliced cheddar cheese, tortillas, assorted lettuces, avocados, and salsa. My family makes these tacos all the time.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco. They are  advocating that the government take control of the situation because the citizens are unable to do so. The solutions they suggest include doubling the price of sodas via a sugar tax, put age restrictions on purchase of products containing added sugar and legislate which stores are allowed to sell products with added sugar.
