San Angel Roasted Squash with Red Mole

Roasted butternut squash topped with red mole (moh-LAY) sauce.

Ingredients

4 pounds butternut squash, skinned and cubed
1 jar San Angel Red (Mole Rojo) sauce
cilantro for garnish

Instructions

Preheat oven to 350°F.

Season the squash cubes with salt and pepper. Put the squash in a baking dish and cover with one jar of San Angel Red Mole.

Bake until the squash is tender, about 30 minutes.
