Refried Bean Salad

Serve this refried bean salad on tortilla chips. This is similar to a cold nacho. Makes a good dish for a picnic.

Ingredients

1 tablespoon olive oil
1 small onion, chopped
1 4oz can diced green chiles
1 teaspoon ground cumin
1 teaspoon ancho or other mild ground chile
1/4 teaspoon ground coriander
3/4 cups refried beans
1/4 teaspoon hot pepper sauce
1/2 cup firmly packed shredded cheddar cheese
1/2 to 3/4 pounds tortilla chips

Instructions

In a medium frying pan heat oil and add onion and cook until transparent, about 5 minutes. Add green chiles, chile powder, cumin and coriander and stir about 2 minutes. Mix in the refried beans and the pepper sauce, stir until hot.

Allow mixture to cool, then add cheese, cover an chill until ready to serve.

To serve, spoon salad onto tortilla chips.
