Polvorones de Naranja (Orange Dusts)

A recipe from Mexico, The Beautiful Cookbook. Each region of Mexico has its own version of this airy cookie. The name refers to the "light" cookie made simply of fat, sugar, egg and flour. You may substitute 1/2 butter and 1/2 shortening for lard.

Ingredients

1 cup lard OR
1/2 cup shortening and 1/2 cup butter
1/2 cup sugar
2 large egg yolks
1/4 cup orange juice
Peel of 2 oranges, grated
4 cups all purpose flour
powdered sugar for dusting

Instructions

Preheat oven to 400°.

In a large bowl beat the lard (or butter/shortening mixture) until light and fluffy. Add sugar a little at a time and beat until thoroughly mixed. Add yolks, orange juice, orange peel, Stir in flour with a spatula.

On a floured surface, roll out the dough to a thickness of 3/4" thick. Cut out 2 1/2" circles and place on a greased baking sheet. Re-roll the scraps and continue until all dough is used.

Bake 25 minutes or until the cookies begin to brown lightly around the edges. Transfer to a rack to cool, then arrange on a platter and sprinkle with the sugar through a fine sieve.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco. They are  advocating that the government take control of the situation because the citizens are unable to do so. The solutions they suggest include doubling the price of sodas via a sugar tax, put age restrictions on purchase of products containing added sugar and legislate which stores are allowed to sell products with added sugar.
