Mexican Lime Mousse Pie

Recipe features Sunkist Mexican (key) limes.  The pie is prepared in a graham cracker crust.

Ingredients

3 Tbsp. cold water
1 envelope gelatin powder
2 cups lime or vanilla yogurt
1/3 cup sugar
1/3 cup fresh Sunkist® Key lime juice (about 12 limes)
Finely grated zest of 2 Sunkist® Key limes
1 cup heavy cream, whipped to soft peaks
1 prepared 9” graham cracker piecrust
Additional Sunkist® Key lime zest, for garnish
Additional Sunkist® Key lime slices, for garnish

Instructions

Pour cold water into small metal bowl. Sprinkle gelatin over water and let stand until gelatin softens, about 10 minutes.

Whisk yogurt, sugar, lime juice and zest until creamy, in medium bowl.
Gently fold lime mixture into whipped cream.

Set bowl of gelatin in saucepan of barely simmering water; whisk until gelatin dissolves, about 1 minute. Whisk into creamy lime mixture.

Pour mixture into piecrust. Garnish with additional lime zest and lime slices.

Chill for at least 4 hours, up to overnight.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco. They are  advocating that the government take control of the situation because the citizens are unable to do so. The solutions they suggest include doubling the price of sodas via a sugar tax, put age restrictions on purchase of products containing added sugar and legislate which stores are allowed to sell products with added sugar.
