3 sweet potatoes about 6oz each
1/2 cup plus 1/2 teaspoon sugar
1/3 cup butter
1/2 teaspoon ground canela (cinnamon)
1/2 cup creme fraiche or thick cream
1 teaspoon grated orange peel (rind only)
1/3 cup raisins
Cook the sweet potatoes in a saucepan of boiling water for 25 minutes. Drain and mash the hot sweet potatoes with the 1/2 cup sugar and the butter, canela, cream and half of the orange peel.
Preheat the oven to 325 degrees. Grease a baking dish and sprinkle with 1/2 teaspoon sugar and the remaining orange peel. Spread the sweet potato mixture in the dish and bake for 10 minutes. Garnish with the raisins and let cool.
