Mexican Cocktail Sauce

A spicy sauce to use with grilled or steamed fish or use it as a side salsa.

Ingredients

1/2 cup V-8 (low sodium)
1/2 cup Clamato (clam/tomato juice)
1 tablespoon fresh squeezed lime juice
2 teaspoon hot pepper sauce
1/2 cup fresh plum tomato, chopped
1/4 cup white onion, chopped
1/4 cup cucumber, seeded and chopped
1/4 cup celery, chopped
1/4 cup fresh cilantro, chopped fine
2 teaspoon prepared horseradish
1 serrano chile, seeded and minced
2 avocados, cut into 1/2-inch cubes
salt and pepper to taste

Instructions

Mix together the V-8 juice, clamato, lime juice, and hot sauce. Add tomato, onion, cucumber, cilantro, horseradish, chile, sugar, salt and pepper. Stir well. Gently fold in the avocados. Cover and chill overnight.  Serve with grilled seafood or even chilled shrimp.
