Habanero Salsa

Firey-hot habaneros are combined with onion, bitter orange and onion to form this spicy condiment.  Serve along side grilled or roasted pork.

Ingredients

2 cups finely chopped onion
1 teaspoon finely minced garlic
1/4 cup orange juice combined with 1/4 cup fresh lime juice
2 teaspoons Mexican oregano
1 teaspoon salt
1 to 2 tablespoons chopped and seed habanero chiles **very hot.  Use gloves when handling.

Instructions

Combine all ingredients in a small bowl for at least 30 minutes.  If you store unused salsa refrigerated make sure to bring back to room temperature before serving.
