Maytag Blue Cheese Mashed Potatoes

The simple addition of Maytag Blue Cheese adds a rich flavor to mashed potatoes.  Goes well with meats and poultry or on its own as a vegetarian dish.

Ingredients

2 lbs potatoes peeled and cut into 2-inch chunks (best are russet or Yukon gold)
3 tablespoons butter, cut up in pieces
3/4 cup half and half
6 ounces Maytag Blue Cheese crumbled
Salt and pepper, fresh ground to taste



Instructions

Place the potato in a large pot with enough cold water to cover.  Bring to a boil then reduce heat and cook until fork tender about 15 to 20 minutes, don't overcook.  Drain well, leaving potatoes in the pan.

Heat the half and half and butter then add the Maytag Blue Cheese and stir until well incorporated.   Add sauce mixture to the potatoes and mash until smooth.  Add salt and pepper to taste.
