Atkins Creamy Garlic Parmesan Italian Dressing

This is a very tart, refreshing dressing recipe.  In addition to being a salad dressing it is an excellent dip for fresh vegetables.

Yield: 16, 2 tablespoon servings

Ingredients

1/2 oz grated Parmesan cheese 
1/4 teaspoon crushed red chili pepper
1 ea garlic clove
2 tablespoon parsley 
1/4 teaspoon salt 
1/4 teaspoon pepper 
1/2 cup mayonnaise
1/3 cup white wine vinegar
2 teaspoon Italian seasoning

Instructions

Whisk mayonnaise, vinegar in a medium bowl. Stir in Parmesan, garlic clove (pressed), Italian seasoning, pepper flakes, salt, pepper and parsley until well blended. Let stand for 5 minutes.

Use immediately or refrigerate in an airtight container for up to 3 days. Stir before using.

This is another 5 Toque recipe for me!  One thing that helps me to stay on track with my eating plan is to have flavorful foods -- bland bores me!  This dressing recipe tastes great (very garlicy so be aware of that if you have an important meeting after you eat this).  I will cut back on the salt next time I make it -- I don't think it needs as much.  I'm also going to try using sour cream instead of mayo for the base -- that would taste good too.  I used a freeze-dried Italian Season mix and that added a bit more texture.  If you are an Atkins dieter, this recipe is good for all phases.
