Spicy Tomatillo Chile Jam

This Tomatillo Jam recipe includes tomatillos, chiles, garlic, ginger, vinegar and sugar.

Ingredients

600g tomatillos, washed and roughly chopped
4 red chiles sliced into rounds
5 garlic cloves garlic, peeled and sliced
2 large thumbs of ginger, julienned
150ml cider vinegar
350g sugar
1 tablespoon Maldon sea salt


Instructions

Put all ingredients except salt in a heavy bottom pan and bring to a boil then reduce to a simmer skimming any foam that rises to the surface. Simmer until mixtures thickens to the consistency of jam, about 40 minutes, then add salt. Taste and adjust seasoning then cool and refrigerate.

The word Jam in this recipe is a bit misleading.  I use it with Basmatti rice  and make an Asian meal out of it.  Fabulous flavor combination.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco. They are  advocating that the government take control of the situation because the citizens are unable to do so. The solutions they suggest include doubling the price of sodas via a sugar tax, put age restrictions on purchase of products containing added sugar and legislate which stores are allowed to sell products with added sugar.
