Zatar (Zaatar)

Zatar Herb Mixture [ZAH-tar]. In Jordan, a spice mixture called zatar is a popular condiment and used to season fried and barbecued meats. It combines the nutty taste of sesame with sumac and dried thyme. Similar mixtures are reported from Syria and Israel. Zatar is often mixed with olive oil and spread on pita bread. Ingredients

1 cup sumac
2 cups roasted, ground sesame seeds
1/2 cup dried ground thyme
2 tablespoons dried leaf oregano
2 tablespoons dried leaf marjoram
2 tablespoons dried leaf savory
1 tablespoon sea salt (to taste)

Instructions

Combine all  ingredients together except the salt and mix well with a fork. Taste and add salt as desired.
 
 Store the mixture in a container with a tight fitting lid. For longest storage keep refrigerated.
