Pineapple Granita

For the best flavor use fresh pineapples but bottled juice will work too.

Ingredients

2 large ripe pineapples, peeled, cored and cut into lg. chunks or 2 cup bottled (or frozen and reconstituted) pineapple juice
1/4 cup water
1/2 cup sugar

Instructions

Pass the chunks of pineapple through a juicer to make fresh pineapple juice or substitute store-bought pineapple juice.

Bring the water and sugar to a boil in a small saucepan, stirring a few times to help dissolve the sugar. Remove from the heat and let cool.

Whisk the pineapple juice into the sugar syrup and transfer to a shallow 13 x 9" metal pan.

Place the mixture in the freezer, mixing with a fork every 30 minutes until frozen, about 2-3 hours.
