Mike's Mom's Lentil Chowder

A hearty stew of lentils, onion, celery, pimento, tomatoes, potatoes and marjoram.

Ingredients

1 1/2 cups lentils
4 cups water
2 teaspoons salt
3/4 cup chopped onion
1/2 cup chopped celery
2 tablespoons butter or margarine
1/2 cup chopped pimento
1 - 28 oz tin canned tomatoes
2 cups diced potatoes
1/4 teaspoon marjoram
1/4 teaspoon pepper

Instructions

Combine lentils, water, and salt. Cook covered for 30 min. You know bubbling away at a reasonable heat. Don't drain. Sauté
onions and celery in butter or margarine. until transparent. Add to lentils with the rest of the ingredients. Cook covered, 30 minutes
more.

That's it. Good cheap nutritious soup, start to finish 1 hour, simple AND easy for a change. Red lentils make a thicker, creamier product than large green ones. I've never made it with small green lentils. I can't get fresh pimentos locally, so have never used them. I substitute green or yellow peppers when using red lentils and red or yellow peppers if large green lentils. I prefer the red chowder to the green for some reason.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco. They are  advocating that the government take control of the situation because the citizens are unable to do so. The solutions they suggest include doubling the price of sodas via a sugar tax, put age restrictions on purchase of products containing added sugar and legislate which stores are allowed to sell products with added sugar.
