2 eggs, lightly beaten
2/3 Pint Whipping cream
2/3 Pound California Avocados
1 teaspoon Salt
1/8 tsp Freshly ground white pepper
Cooked corn kernels - as needed for garnish
Chopped cilantro - as needed for garnish
Preheat oven to 325 degrees F.
On low speed (take care not to create foam), mix eggs, cream, avocados, salt and pepper. Divide among 6 four-ounce ramekins.
Put ramekins in a shallow baking pan; pour hot water around ramekins half-way up their sides. Cover with foil.
Bake until custard sets, about 25 minutes.
Serve
Garnish flan with corn and cilantro leave in ramekins to serve.
