2 cups uncooked rice
3 quarts water
2 tablespoons vegetable oil
2 cups 1 inch pieces bok choy or Swiss chard
2 scallions, finely chopped
1 cup chopped meat or poultry (optional if not making vegetarian only version)
1 teaspoon grated fresh ginger
1 tablespoon tamari sauce (wheat free soy sauce)
1 tablespoon sesame seed oil
In a large saucepan or Dutch oven, bring rice and water to a boil over medium heat. Reduce heat and simmer rice, covered, for 30 minutes.
In a large skillet heat vegetable; add bok choy or chard and scallions and stir-fry 2 minutes. Transfer stir-fried vegetables to pan with rice. Add ginger, tamari, sesame seed oil and (optional chopped meat). Return rice mixture to a boil over high heat, stirring. Reduce heat and cook mixture 30 minutes more.
