Sazon Seasoning Paste

A paste used for flavoring meats, soups or sauces.  Store the paste in glass jar with a tightly fitting lid.  The mixture can be stored refrigerated for several weeks.

Ingredients

3 medium onions cut into quarters
1 ea pepper, bell, green seeded and coarse chopped
1 ea pepper, bell, red seeded and coarse chopped
4 large garlic cloves peeled 
1 tablespoon dried oregano
1 cup  scallions chopped, including green and white parts
1/2 cup  parsley coarsely chopped
1/2 cup coriander (cilantro) chopped
1 teaspoon Tabasco sauce
1tablespoon paprika 
1 cup  tomato paste
1 cup olive oil
1/2 cup white vinegar
salt to taste 


Instructions

Add onion and garlic to the bowl of a food processor and process until coarsely chopped. Add the rest of the ingredients and process until the mixture forms a smooth paste. 

Transfer the mixture to a medium saucepan and bring to a simmer over medium-high heat.  Simmer for about 5-10 minutes until the mixture thickens.  Remove from heat and allow to cool.  Place in a glass jar and refrigerate.

This sounds delicious, but this is NOT a recipe for Sazon, this is more like a Sofrito recipe.
