Mayhaw Syrup

The mayhaw is the tart red fruit from a type of edible hawthorne. Uses for the fruit include jams, jellies, desserts and even wine. For more information about the mayhaw visit the Louisiana Mayhaw Association web site.

3 cups mayhaw juice
3 cups cane sugar
1/2 cup corn syrup


Mix ingredients in large sauce pan. Cook rapidly, stirring constantly for 10 minutes. Remove from heat and skim off foam. Place in jars or syrup bottles and seal.

Enjoy on pancakes, biscuits, waffles, etc.
